Ingrédients :
- 2 blancs d'oeufs
- 15 g de racine de guimauve (herboristerie)
- 500 g de gomme arabique (pharmacie)
- 500 g de sucre en poudre
- 85 cl d'eau
- sucre glace
- colorant
- eau de fleur d'oranger
Préparation :
Concassez la racine de guimauve et faites-la bouillir dans l'eau, laissez infuser 10 minutes puis filtrez.
Dans l'infusion encore chaude et sur feu doux, faites fondre la gomme arabique en remuant à l'aide d'une cuillère en bois. Lorsque la gomme arabique est complètement dissoute, versez le sucre et laissez épaissir sans cesser de remuer jusqu'à la consistance d'un sirop.
Battez les blancs en neige et incorporez-les délicatement au mélange précédent avec le colorant choisi et plus ou moins de fleur d'oranger. Laissez épaissir sur feu doux.
Saupoudrez un marbre ou un moule de sucre glace et coulez-y la pâte de guimauve. Lorsqu'elle est refroidi, coupez-la en carrés ou en bandes et roulez-les dans le sucre glace.

Ingredients:

-15 grams of marshmallow root
-500 grams of gum arabic
-500 grams of powdered sugar
-85 centiliters of water

-orange blossom water
Preparation:
Crush the marshmallow root and let it boil in water, let it infuse for 10 minutes and then strain it.
While the infusion is still warm and simmering, stir in and melt the gum arabic with a wooden spoon. When the gum Arabic is completely dissolved, pour in the sugar and let it thicken while stirring until it is the thickness of syrup.
Beat the egg whites and slowly mix them in with your preferred coloring, and however much orange blossom water you like. Let thicken while simmering.
Sprinkle a mold with the confectioner’s sugar and spread the marshmallow paste. When it’s cooled, cut it into squares or strips and roll them in confectioner’s sugar.
