A zserbó az egyik legnépszerűbb süteményünk, a bejgli mellett a másik kedvenc édesség a karácsonyi asztalon. Az édes csoki a savanykás baracklekvárral és dióval tökéletes ízkombinációt alkot. Emellett pedig a zserbó előnye, hogy sokáig eláll. Még talán finomabb is, ha áll néhány napig, mert az ízek összeérnek.
A zserbó megálmodója Emile Gerbeaud cukrász, aki Franciaországban és Angliában töltött évek után Magyarországon nyitott cukrászdát 1884-ben, a mai Vörösmarty-téren, ahol különleges süteményei közt megtalálható volt a zserbó is.
Néhány tanács zserbósütéshez
1. A zserbó egy drága sütemény, hiszen sok lekvár kell bele és a dió sem olcsó mulatság, így ha már zserbósütésbe fogunk, ne spóroljunk semmivel. 30 dkg darált dió és egy nagy üveg (kb. 8 dl) baracklekvár kell hozzá!
2. Házi baracklekvárral dolgozzunk! Ha nem főzünk be lekvárt nyáron, inkább kérjünk egy üveg lekvárt a családtól, barátoktól, de bolti lekvárból nem lesz az igazi.
3. Szánjunk időt az elkészítésre! A zserbót elkészíteni nem nehéz, viszont elég időigényes. Este 6 után már inkább ne álljunk neki!
Zserbó Recept
1. A diót daráljuk le, keverjük össze a porcukorral és reszeljük bele egy citromhéját, majd tegyük félre.
2. Az élesztőt futtassuk fel a langyos tejben egy evőkanál kristálycukorral. Hagyjuk 15 percig állni, míg a többi hozzávalót kimérjük, előkészítjük.
3. A lisztet keverjük össze a porcukorral. Majd a lisztes keveréket a vajjal morzsoljuk össze alaposan a tenyerünk közt. Addig morzsoljuk, míg az egész apró morzsás állagú nem lesz.
4. Adjuk hozzá a két tojássárgáját, a csipet szódabikarbónát és felfuttatott élesztőt a tejjel.
5. A tésztát gyúrjuk össze, addig, míg a tészta el nem válik a kezünktől. (kb. 5 percig)
6. A tésztát osszuk 3 egyenlő nagyságú gombócra, és az első gombócot lisztezett deszkán nyújtsuk vékonyra. Egy 35×40 cm-es tepsit vajazzunk, majd lisztezzünk ki. Sütőpapírt is használhatunk! A tésztát a sodrófára tekerve emeljük át a tepsibe és vágjuk pontosra, hogy passzoljon. Ahol túllóg a tészta, vágjuk le és toldjuk meg vele a lyukas részeket.
7. Kenjük meg a tésztát jó adag baracklekvárral. Kb. 4-5 púpozott evőkanál lekvár kerül egy réteg tésztára. Majd szórjuk meg a cukros, citromhéjas dióval.
8. Majd jöhet a következő réteg. Fektessük rá a következő réteg tésztát, kenjük meg a fél üveg lekvárral, szórjuk rá a maradék diót és végül nyújtsuk ki a harmadik gombóc tésztát, ami a zserbó teteje lesz.
9. A tészta tetejét szurkáljuk meg néhány helyen egészen a tepsi aljáig. Majd takarjuk le a zserbót egy tiszta konyharuhával és 1 órát pihentessük.
10. Ha eltelt az egy óra, melegítsük elő a sütőt 175 fokra és süssük a zserbót 35 percig, míg a teteje aranybarna nem lesz.
11. Várjuk meg míg langyosra hűl a zserbó, és utána készítsük el a csoki mázat. A mázhoz keverjünk ki 6 evőkanál porcukrot, 6 evőkanál holland kakaóval. Öntsük hozzá a forró vizet és a kávéskanál olajat, hogy fényes legyen, majd egy kézi habverővel keverjük simára. Simítsuk vékonyan a zserbó tetejére egy spatulával, vagy kanállal. Lehet, hogy nem olyan szép egyenletes, mintha tortabevonóval dolgoztunk volna, de sokkal finomabb! Egy éjszakát, vagy legalább néhány órát hagyjuk száradni a mázat.
12. Másnap szeletelhetjük is a zserbót! Mindig csak annyit, amit épp megeszünk, nehogy kiszáradjon. Vágjuk vékony téglalapokra, vagy rombusz alakúra!

Undoubtedly, the Gerbeaud cake, alongside the poppy seed roll, is one of Hungary’s most popular Christmas desserts. The sweetness of the chocolate, paired with the sourness of the apricot jam and walnuts, creates the perfect combination of flavors. A great feature of the Gerbeaud cake is that it lasts for a very long time, which allows the flavors to really come together, and is known to make cake taste even better after a few days.
The dessert was created by Emile Gerbeaud, a confectioner who, after spending many years in France and England, opened his confectionery located on the infamous Vörösmarty Square in Budapest, in 1884. The Gerbeaud cake was only one of the many famous desserts he offered at his confectionery.
INGREDIENTS
For the dough
50 dkg flour
10 dkg powdered sugar
20 dkg butter
1.5 liter milk
2 dkg yeast,
2 egg yolks
2 pinches of baking soda
For the filling
30 dkg of ground walnuts
20 dkg powdered sugar
1 lemon, zested
8 dl apricot jam
For the topping
6 tablespoons of Dutched cocoa powder
6 tablespoons of powdered sugar
6 tablespoons of boiling hot water
1 teaspoon of oil
A FEW TIPS FOR BAKING A GERBEAUD CAKE
1. The Gerbeaud cake is not a cheap cake to make, as both the jam and walnut at such high quantities can be quite expensive. If you’re determined to make this dessert, consider investing a bit more in the ingredients, and don’t be afraid to use them generously – you will need 30 dkg ground walnuts and a big jar (approx. 8dl) of apricot jam.
2. Use homemade apricot jam, and avoid store-bought products if possible. If you didn’t conserve any apricots this summer, ask around amongst your friends and family. It really makes a huge difference!
3. Allow plenty of time for the preparation! Preparing a Gerbeaud cake is not that difficult, but it takes time to do it right – it is definitely not advised to start it at 6 in the evening.
PREPARATION
1. Grind the walnuts, mix them together with powdered sugar, add lemon zest, then set the mixture aside.
2. Heat up the milk to a lukewarm temperature, add yeast and a tablespoon of granulated sugar. Set it aside for 15 minutes, which gives you enough time to measure out and mix your other ingredients.
3. Combine flour with powdered sugar, then add butter. Work the mixture with your hands until you achieve a slightly crumbly texture.
4. Add two egg yolks, a pinch of baking soda and the yeast mixture.
5. Knead the dough until it doesn’t stick to your hands. (Approx. 5 mins)
6. Divide the dough into 3 equal parts. Lightly dust your working surface with flour, and start rolling out the first piece of dough. Spread butter and dust flour onto a 35×40 cm baking pan (you can also use parchment paper). Transfer the thinned-out dough onto a rolling pin, then lift it into the pan. Make sure you cut the dough to size with a knife, so it fits the pan. Cut off the overhanging parts to fill up any gaps.
7. Spread a generous amount of apricot jam (approx. 4-5 heaping tablespoons of jam per layer), followed by a layer of the lemon zest and walnut mixture.
8. Onto the second layer! Lay down the next layer of dough, spread the other half of the jar onto it, and sprinkle the remaining walnuts over it. Finally, stretch out the third dough portion, which will form the top layer of the cake.
9. Pierce the top layer a few times with a fork (make sure your fork goes through all layers). Cover the cake with a clean kitchen cloth and let it rest for 1 hour.
10. After an hour, preheat your oven at 175 °C and bake the cake for 35 mins until the top layer gets a lovely golden-brown color.
11. Wait until the cake cools down, then start preparing the chocolate glaze. In order to prepare the glaze, mix together 6 tablespoons of powdered sugar with 6 tablespoons of Dutched cocoa. Combine this with boiling water and a teaspoon of oil – this will make your glaze smooth and shiny. Mix it with a hand whisk until you achieve a smooth texture. Pour the glaze on top of the cake, and spread it out with a spoon or spatula. It may not be as even as store-bought chocolate coating, but it is a lot tastier! Allow the glaze to set overnight, or at least for a few hours before serving.
12. The following day the Gerbeaud cake is finally ready to be sliced! Only slice up as much as you think you will eat, so the cake doesn’t dry out. Cut the cake into thin rectangles or diamond shapes!
