Source text - English Winters used to be cold in England. We, my parents especially, spent them watching the wrestling. The wrestling they watched on their black-and-white television sets on Saturday afternoons represented a brief intrusion of life and colour in their otherwise monochrome lives. Their work overalls were faded, the sofa cover—unchanged for years—was faded, their memories of the people they had been before coming to England were fading too. My parents, their whole generation, treadmilled away the best years of their lives toiling in factories for shoddy paypackets. A life of drudgery, of deformed spines, of chronic arthritis, of severed hands. They bit their lips and put up with the pain. They had no option but to. In their minds they tried to switch off—to ignore the slights of co-workers, not to bridle against the glib cackling of foremen, and, in the case of Indian women, not to fret when they were slapped about by their husbands. Put up with the pain, they told themselves, deal with the pain—the shooting pains up the arms, the corroded hip joints, the back seizures from leaning over sewing machines for too many years, the callused knuckles from handwashing clothes, the rheumy knees from scrubbing the kitchen floor with their husbands' used underpants.
When my parents sat down to watch the wrestling on Saturday afternoons, milky cardamon tea in hand, they wanted to be entertained, they wanted a laugh. But they also wanted the good guy, just for once, to triumph over the bad guy. They wanted the swaggering, braying bully to get his come-uppance. They prayed for the nice guy, lying there on the canvas, trapped in a double-finger interlock or clutching his kidneys in agony, not to submit. If only he could hold out just a bit longer, bear the pain, last the course. If only he did these things, chances were, wrestling being what it was, that he would triumph. It was only a qualified victory, however. You'd see the winner, exhausted, barely able to wave to the crowd. The triumph was mainly one of survival.
Translation - Hungarian A telek hidegek voltak Angliában. Mi, és különösen a szüleim, birkózó meccseket nézve töltöttük azokat. A fekete-fehér tévéjükön szombat délutánonként nézett birkózás egy kis időre életet és színt hozott az egyébként egyhangú életükbe. Munkásruháik megfakultak voltak, az évek óta használt szófa takarója megfakult volt, és fakulóban voltak önmaguk emlékei az Angliába költözést megelőző életükről is. Szüleim, és egész generációjuk, szinte egyhelyben toporogva, életük legjobb éveit gürcölték át a gyárakban hitvány fizetésért. Egy élet, melyet a robotolás, eldeformálódott gerinc, krónikus ízületi gyulladás, levágott kezek jellemeznek. Összeszorított foggal tűrték a fájdalmat, bár nem is volt más választásuk. Magukban próbáltak nem gondolkozni - nem figyelembe venni a kollegáik megalázó viselkedését, nem törődni a műszakvezető folytonos kárálásával, és ami az indiai nők esetében bizony előfordult, nem bosszankodni azon, ha a férjük elverte őket. Imádkoztak, hogy hősünk, bár kifeküdve a szőnyegen, egy kettős szorítás csapdájában vagy éppen agonizálva a veséjét markolászva, de mégse adja fel. Ha csak még egy kicsit kitartana, elviselné a fájdalmat, csak tovább bírná! Ha ezt meg tudta tenni, akkor esélye volt, hogy a birkózás szabályaiból adódóan még győzedelmeskedett is. Azonban ez csak pontozásos győzelem volt. Látnátok egy győztest, amint kimerülve, szinte integetni is alig tud a tömegnek. A győzelem főként a túlélésről szólt.

Technológia fejlesztésénél alapvető cél egy magas minőségű végtermék létrehozására képes komplett lepárlási technológia megalkotása, mely a jól feldolgozott és jó minőségű gyümölcscefréből egy viszonylag magas alkoholtartalmú, aromákban gazdag párlatok előállítását teszi lehetővé, teljesen kontrolált formában.
További cél az ideális hatásfok biztosítása mellett a késztermék minőségének optimális szinten tartása, valamint a gyümölcsök elsődleges illat anyagainak párlatban történő megőrzése, melynek folyamat irányítási rendszerét egy ipari számítógép végzi.
Ez a technológia kiegészült három szabadalommal védett műszaki megoldással, mely energetikailag és technológiailag is új alapkora helyezi a lepárlás hatékonyságát és jóságát. A berendezés szakaszos üzemű egylépcsős lepárló, mely a jelenleg alkalmazott legmodernebb és ezzel együtt a leggazdaságosabb pálinkafőzési eljárásra épül, melyben forradalmian új műszaki megoldások kerültek beépítésre, biztosítva ezzel az ideális végtermék előállításának lehetőségét. Előnyei a leggyakrabban alkalmazott kétüstös berendezésekkel szemben a következők, melyet energetikai és technológiai oldalról is vázolunk egy pár sorban.
A kétüstös berendezések először alszeszt készítenek, majd az alszeszből a finomító üstben készül el a végtermék. Ez energetikai oldalról azt jelenti, hogy gyakorlatilag kétszer kell majdnem ugyan azt a mennyiséget felmelegíteni, majd ismét elpárologtatni.
Könnyen belátható, hogy energetikai oldalról mennyire gazdaságtalan, ezzel együtt versenyképtelen egy ilyen technológiát alkalmazó főzde, egy modern berendezéssel szemben, mert lényegesen nagyobb energia költséggel kénytelen dolgozni.
Technológia oldalról vizsgálva az együstös berendezésekről, a következőket mondhatjuk el minden egyes tányér úgy működik, mint egy külön finomító üst, mely a párlat teljes mértékében lekondenzál és felületéről elpárolog.
Pálinkafőző berendezés számítógépes automatizálása:
Vezérlési és folyamatirányítási rendszer a pálinka főzdék lepárlási technológiájának komplex irányítására.
A cefre betöltése után az előre megadott paraméterek alapján a főzőmester felügyelete mellett teljesen automatikusan levezeti a lepárlási folyamatot. Főzés közben a lepárlás kontrolálható, ha szükséges a paraméterek menetközben megváltoztathatók, optimalizálva ezzel a lepárlás folyamatát az előállítandó termék magas minőségi követelményeihez.
A cefre tulajdonságait figyelembe véve megadhatók a késztermékre vonatkozó különböző minőségi elvárások.
Translation - English Palinka (Hungarian fruit brandy) distilleries and technologies
The main focus of technological development is to create a complete distillation technology capable of making a quality product, yielding a comparatively high alcohol content and aroma rich distillate from a well produced and high quality fruit mash using a completely controlled process.
Furthermore, our aim is not only to assure the optimal quality of the final product while providing ideal productivity, but also to capture the fruit’s primary aromas in the distillate. The manufacturing process is controlled by an industrial computer.
Three registered technical patents were added to complete this technology, which broke new ground in the productivity and quailty of the distillation process, both from the energetics and technological standpoints. The apparatus is a periodic operation single distillery based on the latest and most cost efficient distillation process, which contains revolutionary technical advancements that guarantee the production of an ideal end product. It has several advantages over the more widely used double distillery, which we will discuss from both the energetics and technological points of view.
The first chamber of the double distillery produces a sub-spirit which is then used to manufacture the final product in the refining chamber. From the energetics point this means that in reality we have to heat up close to the same quantity two times and then evaporate it.
It is easy to understand that this technology is not only uneconomical but also unable to compete with a modern apparatus as it demands considerably higher energy costs.
Examining the single distillery from the technological point we can state the following: every single plate works as a separate refining chamber and the spirit completely condenses and evaporates from the surface.
Computer automatization of the palinka distillery:
It is the control and process mangement system that manages the complex spirit distillary’s distillation technology.
Following the addition of the fruit mash this system will automatically manage the distillation process based on the given parameters and under the supervision of the master distiller. The distillation procedure is controllable, where the parameters may be changed during the process if necessary, optimazing the distillation process to meet the demand of manufacturing a high quality product.
The different quality requiremets for the final product can be determined based on the quality of the fruit mash.
