Le sucre, la farine, les œufs et les produits laitiers sont les bases de toute pâtisserie française. La question à se poser est de savoir comment remplacer un produit d'origine animale. Même si certaines recettes peuvent manquer à certains de ces ingrédients, il est nécessaire de comprendre leurs rôles afin de trouver le substitut adéquat.
FARINE

Le type de farine principalement utilisé dans ce livre est le blé. Selon le niveau de raffinement, il existe différents types de farine de T45 à T180: une classification selon le rapport du son (balle de blé). "T" représente le rapport des cendres, qui correspond à la quantité de résidus minéraux présents dans la farine après broyage. Pour mesurer ce rapport, on chauffe 100 g de farine à 900 degrés C pendant deux heures, puis on pèse les cendres qui restent du son. Ainsi, s'il reste 0,45 g après la combustion, la farine sera cassée sous le nom de T45, etc.
Plus le chiffre qui suit le "T" est petit, moins il est riche en minéraux et en vitamines. Au contraire, le type le plus élevé est celui qui contient le plus de parties de cosses de blé riches en vitamines E. Les farines complètes dans la mesure où elles en contiennent la totalité. Notez que les amidons sont des farines raffinées à l'extrême qui ne contiennent que de l'amidon, un glucide complexe contenu dans les céréales.
Il n'y a pas de meilleur type de farine; le choix se fait en fonction des besoins. En pâtisserie, les farines les plus utilisées sont la T45 et la T55, même la T65.
La farine T45 est la plus raffinée. Peu intéressant d’un point de vue nutritionnel, c’est le plus présent dans les supermarchés. En raison de son raffinage, cette farine est la plus riche en gluten. Nous privilégions son utilisation pour les pâtes élastiques ou levées et pour les gâteaux fins tels que les financiers ou les madeleines.

RAW INGREDIENTS
Sugar, flour, eggs and dairy produce are the bases to all French
patisserie. The question is how to replace any produce with an animal
origin. Even though for some recipes, one can do without some of these
ingredients, it is necessary to understand their roles in order to find adequate substitutes.
FLOUR
The type of flour mainly used in this book is wheat. According to the level
of refinement, there are different flour types from T45 to T180: a
classification according to bran (wheat husk) ratio. "T" stands for ashes
ratio, which means the quantity of mineral residue present in flour after
grinding. To measure this ratio, 100g of flour is heated to 900° C for
two hours, and then the ashes that remain from the bran get weighed.
Thus, if 0.45g remain after the combustion, the flour will be classified as
T45, etc.
The smaller the number following the "T" is, the less rich in minerals and
vitamins the flour is. On the opposite, the highest the type is, the more
wheat husk parts are in the flour. Wheat husks are rich in vitamins E.
Wholemeal flour even incorporates the whole wheat husk.
Note: starches are flours which are refined to the extreme. They only
contain starch, a complex carbohydrate in cereals.
There is no better flour type; choice is made based according to
requirements. In patisserie, the mostly used flours are the T45 and the
T55, or even the T65.
The T45 flour is the most refined one. Little interesting nutritionally, it is the most present one in supermarkets. Because of its
refining, this flour is the richest in gluten. We privilege its use for elastic
or raised dough and for fine cakes such as financiers or madeleines.

The T45 flour "de force" or "hulled-grain" is richer in proteins (gluten)
than standard wheat flour. This richness grants it higher raising ability. It
is ideal for Viennese pastries, brioche pastry or even choux pastry.
