Source text - Portuguese A primeira pergunta, quando eu falo que sou vegana, em relação a alimentação é se eu como soja. Mas e a proteína você tira da soja né?
Pensei que essa história da soja e da proteína já tivesse sido vencida, mas eis que não.
Quando me tornei vegana o que eu mais comia era soja e todos seus subprodutos, mas cada ano que passava e que eu adentrava mais a fundo na causa e repensava minha existência neste planeta, mais coisas eu ia me desapegando e um deles foi a soja….
Eu não como mais soja e posso te listar trilhões de motivos pelos quais não como mais, mas vou me restringir aos mais básicos…
A soja vem da ásia central, mas a especificamente da China. Os propagadores de seus benefícios alegam que ao longo de milênios ela foi muito usada o que comprovam os seus esses tais benefícios. Meia verdade. Inicialmente, ela era utilizada em regime de rotação de culturas para fixar nitrogênio no solo. Por muito, muito tempo não se considerava a soja como algo adequado para comer, até que por escassez de alimentos (muita gente, pouca comida) os orientais desenvolveram a fermentação da soja e assim criaram surgiu o shoyu, o tamari, o natô, o missô e o tempê que eram e são consumidos como condimentos em doses muito pequenas e sem conservantes, espessantes e realçadores de sabor como o glutamato de monossódico.
No Japão o consumo de soja é de 10 gramas por dia.
Inicialmente até os anos 20 a soja era utilizada como fonte de matéria prima industrial, seu óleo era utilizado para tintas. Depois como ração para animais e logo depois como a melhor fonte de proteína para humanos.
Porém o que ninguém disse que a soja contém uma série de substâncias que podem ser prejudiciais a saúde – uma vez dei uma oficina a um grupo de mãe com filhos autista e um dos primeiros alimentos que retiraram dos seus filhos foi a soja e seus derivados- os chamados antinutrientes. Em algumas sementes é possível reduzir esse nível deixando-as de molho por horas, com a soja não.
Como é feito o leite de soja industrializado?
Deixa-se de molho os grãos em uma solução alcalina*, de modo a neutralizar o máximo que der os inibidores da tripsina. Depois essa pasta passa por um aquecimento a mais de 100 graus, sob pressão. Esse processo neutraliza grande parte dos antinutrientes, mas danifica a estrutura da proteína, tornando-as de difícil digestão.
E a proteína de soja?
Essa mesmo que substitui tudo na vida de um vegetariano recém iniciado. Vamos ao processo?
Primeiro retiramos da soja moída o óleo e seu carboidrato usando solventes químicos (derivados do petróleo) e alta temperatura. Depois misturamos uma solução alcalina separando as fibras. Logo submetemos a um processo de precipitação e separação utilizando um banho ácido. Por fim passa pelo processo de neutralização em uma solução alcalina. Neste processo todos os nutrientes já se quer existem mais o que restam são os inibidores da tripsina firmes e fortes.
“Proteína vegetal texturizada, ou PVT, a famosa “carne de soja” não é nada mais do que proteína isolada de soja que foi compactada através de um processo industrial de elevada pressão e temperatura. Tão indigesta quanto o isolado de proteína de soja, se não mais, porque esta é muitas vezes adicionada de corante caramelo, substância reconhecidamente cancerígena, e o famigerado realçador de sabor glutamato monossódico, um neurotóxico comum na indústria da comida industrializada – pois é um viciante das papilas gustativas que consegue transformar até mesmo um pedaço de isopor insalubre em algo que é “impossível comer um só”.”
Atualmente, quase totalidade da soja é transgênica- geneticamente modificadas para resistiram a fortes agrotóxicos, que matam todas as outras formas de vida (inclusive nós) menos a soja.
No Brasil 70% da soja é exportada para alimentar animais. Áreas enormes de matas estão sendo desmatadas para plantação de monocultura e para agropecuária.
A industria da soja é tão grande e poderosa, quanto a industria dos lácteos e das carnes que nos fazem acreditar que (carne, leite e soja) é bom pra saúde.
Ah, mas a porcentagem que um vegano come de soja é muito pequena comparada o que se produz pra agropecuária. É bem verdade, mas consome e não exime a responsabilidade pelo crescimento do mercado e por todo quadro social, alimentar e político, sinto dizer.

I thought that this tale about soy and protein had already been overcome, but no.
When I became vegan, what I was mostly eating was soy and all of its by-products, but as the time went by and so I was getting deeply into this cause and rethinking about my existence in this planet, more things I was detaching myself from, and one of them is soy concept.
I do not eat soy anymore and I could list plenty of reasons for such decision, but I’m just going to mention the most simple ones...
Soy is originally from Central Asia, specifically from China. The propagators of its benefits claim that it’s been used through the milennia, which proves such benefits. Half true. Firstly, it was used in regime of crop rotation for fixating nitrogen in the soil. For a long time, soy wasn’t considered appropriate for eating, until that, due to food shortage (a lot of people, little to eat), the Orientals developed soy fermentation and thus created shoyu, tamari, natô, missô and tempê which were and still are consumed in really small doses as spices, without preservatives, thickeners, as well as flavor enhancers like monosodium glutamate.
The intake of soy in Japan is 10 grams a day.
Soy was initially used until the 20’s as source of industrial raw material, its oil was used for painting. Afterwards, for animal feeding and then as the best source of protein for humans.
However, what nobody says is that soybeans contain numerous of substances that can be harmful to human health – I once lectured to a group of mothers of autistic kids and one of the first foods that they took away from their children was soy and its by-products – the so called antinutrients. It’s possible to reduce the level of it in some seeds by placing it in water for hours, but not with soybeans.
How is the industrialised soymilk made?
Let the soybeans soaking in an alkaline* solution, in order to neutralise to the maximum possible the trypsin inhibitors. This paste then goes through an over 100°C heating, under pressure. This process block a large proportion of antinutrients, but also damage the protein structure, making them difficult to be digested.
What about soy protein?
Exactly this one that replaces everything in the newly started vegetarian’s life. Let’s go through the process?
First, the soy oil and its carbohydrates is removed from the ground soybean using chemical solvents (petroleum derivatives) at high temperature. Then we mix an alcaline solution in order to separate the fibers. Then it’s put through a process of separation and precipitation using an acid bath. At last, it’s neutralised in an alkaline solution. The nutrients barely existed in this process but what remains is simply porent trypsin inhibitors.
“Textured soy protein, or TSP, the so called “soy meat” is nothing but isolated soy protein that was compacted through an industrial process at high pressure and temperature. It’s as indigestable as soy protein isolates because it’s been often being added with coloring caramel, substance known to be a potent carcinogen, plus the notorious flavor enhancer monosodium glutamate, an neurotoxic substance commonly used in the pet food industry, which works by exciting the taste buds that can even turn a piece of foam into something ‘’impossible to eat only one’’.”
Currently, nearly all of soybean production is transgenic – genetically modified in order to resist to highly chemical pesticides, that kill all other life forms (including us), expect the soybean.
In Brazil, 70% of soybean production is exported for animal feeding. Huge forest areas has been deforested for animal agriculture and monoculture plantation.
Soy industry is as large and powerful as the dairy and meat industry that make us believe that (meat, milk and soya) is good for health.
• Oh, but the percentage of soybeans consumed by vegan people is too small compared to what is produced for animal agriculture. It’s really true, but it’s still consumed so we aren’t exempted from responsibility for the market growth, the entire social, food and political framework.
There is an infinity of protein source. First get to know what protein really is, find out what you are eating, how you are eating and what’s your role in this new way of feeding, living, existing in this planet, in the earthly mother.

I'm a native Brazilian who's been studying english for about 8 years.
