Hungarian to English: Introduction of the local winecellars
Source text - Hungarian Schunk Pince - Pécs
A Schunk Pince családi üzemeltetésű és működtetésű borászat, ahol a borkészítés családi hagyományokon alapul. A pincénkben 1996 óta készülnek kisebb és nagyobb tételben, változó szortimentben vörösborok, friss fehérborok és üdítő rozék. A folyamatos terület-növekedés, új telepítések, új szőlőfajták és lépésről-lépésre haladó technológiai fejlesztések jellemzik a családi borászatunk növekedését, fejlődését. A borkészítés iránti elköteleződésünket a boraink helyi, regionális és szélesebb körű borversenyeken is elért eredményei is bizonyítanak.
Cabernet Sauvignon és Merlot fajtáinkkal bebizonyítottuk, hogy a Mecsek déli lankáin nemcsak kiváló minőségű fehér, hanem prémium kategóriájú vörösborokat is lehet készíteni. Családi vállalkozásban működtetett kis borászatunkban a fehérborok elsősorban reduktív technológiával acéltartályos erjesztéssel, a vörösborok pedig hagyományos tölgyfahordós és barricque érleléssel készülnek.
Saját ültetvényeinkről származó fajták (Cabernet Sauvignon, Merlot, Sauvignon Blanc, Cserszegi Fűszeres) mellett vásárolt szőlőkből (pl. Portugieser, Pinot Blanc, Hárslevelű) is készítünk borokat. A hagyományos parafadugós palackzárás mellett 2014-től bevezettük a csavarzáros (pilver-kupakos) palackokat a friss fehérboraink számára.
Célunk, hogy a nagy hagyományokkal és kiváló termőhelyi adottságokkal rendelkező Pécsi Borvidék régi elismertségének visszaállításához a Schunk Pince boraival hozzájáruljon!
Bodri Pincészet – Szekszárd
Bodri Család és Csapat
Az Optimus étterem megnyitása óta huszonöten dolgozunk a Birtokon. Mi, a családtagok is ott vagyunk a pince életének összes fontos mozzanatánál, a vendéglátástól, a szőlészeten, a borászaton, a logisztikán, a kereskedelmen keresztül a marketingig. A családból mindenkinek megvan a "saját" részterülete, ami kiváló kollégáink munkájával igazán működőképes. Bősz Adrián a borászatért, Solymos Gergely a kereskedelemért, Pölöte Norbert a vendéglátásért, Makk Norbert pedig a gasztronómiáért felel. A kitűnő szőlő-és pincemunkásaink, a szobaasszonyok a kézilányok, a pincérek, a szakácsok és a karbantartásáért felelős műszak tagjai jellemzően hosszú ideje a dolgoznak a pincészetnél, velük igazi jó kollegiális-familiáris viszony alakult ki.
Az építészet
A Bodri Pincészet épület-együttese szervesen illeszkedik a szekszárdi tájba. A vendégtereket a külső megjelenéssel teljes összhangot mutató visszafogott, ízléses, rusztikus stílus uralja, melyben a fa dominál.
Maga a pincerendszer a hazai pincék legjelentősebb építőmestere, Heimann Ferenc monumentális alkotása. A belső terek nemcsak tiszta arányrendszerüknek, a kupolák nyújtotta szakrális ünnepélyességnek köszönhetik a barátságos, vonzó hangulatúságukat, hanem annak is, hogy apró elemek teszik különlegessé, egyedivé. Így található a pincebelsőben egy közönséges kerekes kút, továbbá két igen kvalitásos szobor is. A pincében háromszáz kóstolóvendég tud helyet foglalni.
Nevét a Szeleshát dűlőről kapta.
A Szeleshát dűlő észak-déli fekvésű, körülbelül 300 méter széles dombtető, ami déli irányba, Lajvérpuszta felé enyhén lejt. A dűlő déli része szurdik útban vezet le a Bonyhád - Bátaszék útra. A Birtoktól keletre a Sárköz síksága és a Gemenci erdő valamint a Duna ártere nyújt festői élményt. Délre akelta eredetű Bátaszék neogótikus templomtornya magaslik ki. Nyugatra a Geresdi dombság, a Mórágyi pincék és a Völgység dombjai látszanak. A távolban a Mecsek legmagasabb csúcsa, a Zengő is kivehető. Észak felé tekintve Szekszárd városa látszik.
A borvidék klímája szubmediterrán jellegű. A Szeleshát talaja a dombvidékre jellemző magas mésztartalmú, mélyrétegű lösz.
A Szent Gaál Pincészetnél 2011-től Fogl János vette át a borászati munka irányítását.
A strázsahegyi dűlő 16 hektár, ami 12 hektáron termő.
Fajtaszerkezet: Cabernet Sauvignon, Cabernet Franc, Kékfrankos.
A dűlő Szekszárd legnemesebb és legjobb adottságokkal rendelkező vörösboros dűlője, mely megállapítást az eddigi évek tapasztalatai és a pincében lévő borok alátámasztanak.
A jövőben is innen várjuk nagy, testes borainkat.
Művelési mód: középmagas kordon
Twickel Szőlőbirtok Kft. – Szekszárd
A közel 2 000 hektáron elterülő Szekszárdi Borvidék legnagyobb területtel rendelkező borászata a Twickel Szőlőbirtok. A csaknem 200 hektáron gazdálkodó vállalkozás tulajdonosa 1993 óta báró Twickel György. A tulajdonos édesanyja Zichy Mária Terézia grófnő, aki magyar nemesi családban született, azonban 1956-ban hazája elhagyására kényszerült. Németországba költözött, ahol megismerkedett majdani férjével, az Észak-Rajnai Westfalia-i származású Clemens Twickel báróval.
Báró Twickel György eltökélt törekvése a magas minőség elérése és fenntartása, mely mára Magyarország egyik legmodernebb borászati üzemévé tette a pincészetet.
A család 14 hektáron gazdálkodik, a termésnek nagyjából a 90%-át értékesítik, a fennmaradó részből (illetve némi vásárolt kékszőlőből) maguk készítenek bort. Szőlővel Tibor közel 21 éve foglalkozik, ám a borkészítést és az arculat kialakítását párjával, dr. Szőts Violával 6 éve kezdte.
Az 1990-es években a kárpótlási program keretében jutottak fehérszőlős területekhez, a cabernet sauvignon-t és merlot-t helyi gazdáktól veszik, előbbiből évek óta rozét készítenek, nem is eredmények nélkül. Az első Nemzetközi Villányi Rozéversenyen rögtön nagyaranyérmet szereztek vele. Tibor jelenleg a 2012-es rajnai rizlingjükre a legbüszkébb, ami fajtajelleges, telt, gyümölcsös, koncentrált tétel lett.
A borász pár támogatja a mára kissé háttérbe szoruló vinotékában történő borvásárlást, termelői áron juttatja el tételeit többek közt a bonyhádi Blénesi Borházba.
A keskenyebb pinceág vezet be a templom nagyságú, 10 méter széles, 40 méter hosszú, 7 méter magas belső pincerészbe.
2003 októberétől a „Villányi Szársomlyó” Mg. Kft. tulajdonát képezi.
E kivételes adottságot felhasználva évente egyszer - az Európai Bordalfesztivál keretében - a pince 400 fős hallgatóságot befogadó hangverseny teremmé változik. Akusztikája az egyedi, katedrális-szerű kialakításnak köszönhetően kiváló.
A Batthyány Pince jelenleg a Villányi Szársomlyó Kft. tulajdonában van.
A „Villányi Szársomlyó” Mg. Kft szőlőültetvényei a villánykövesdi Batthyány pincétől délre illetve nyugatra találhatók.
Translation - English Schunk Cellar - Pécs
The Schunk Cellar is a family-run and operated winery where winemaking is based on family traditions. Since 1996, we have been producing a selection of red wines, crisp white wines, and refreshing rosés in various quantities. The purchasing of new vineyards, the creation of new plantations, the addition of new grape varieties, and the step-by-step introduction of new technologies characterise the growth and development of our family winery. Our commitment to winemaking is further enhanced by the prizes we have received at local, regional, and even more comprehensive wine competitions.
With our Cabernet Sauvignon and Merlot varieties we have proved that the southern slopes of the Mecsek are suitable for the production of not only excellent quality white, but also premium red wines. In our small, family-run business, white wines are primarily fermented in steel containers, using the reductive technology, with red wines produced in traditional oak and barrique barrels.
In addition to the varieties grown in our own plantations (Cabernet Sauvignon, Merlot, Sauvignon Blanc, Cserszegi Fűszeres), we also produce wines from grape varieties purchased elsewhere (e.g., Portugieser, Pinot Blanc, and Hárslevelű). Apart from the traditional cork stoppers, since 2014, we have also been using screw caps to seal the bottles of our crisp white wines.
With the wines produced in the Schunk Cellar, we aim to facilitate the re-acknowledgement of the tradition-based Pécs Wine Region with superb terroir conditions.
Bodri Winery – Szekszárd
Bodri Family and Crew
Since the opening of the Optimus Restaurant, 25 people have worked at the Estate. We, the family members are also present at every important phase of the cellar’s life, from catering, vine cultivation, winemaking, logistics and trading, right through to marketing. Each family member has his/her own subfield, which, along with our outstanding colleagues, makes the business truly operational. Adrián Bősz is responsible for winemaking, while Gergely Solymos for trading, Norbert Pölöte for catering, and Norbert Makk for gastronomy. Our phenomenal vine- and cellar workers, the female room service crew, the female kitchen hands, the waiters, the cooks, as well as the members of the shift responsible for the maintenance have all been working at the winery for a considerable amount of time, and we have developed a genuine collegial-familial relation with them.
The architecture
The building complex of the Bodri Winery forms an integral part of the Szekszárd landscape. We have consciously aimed to raise brick buildings that complement the warm colours of the town and its traditions. During the first construction phase, the processing and tasting hall (the present-day Optimus Restaurant) was built from second-hand bricks reminiscent of the colour and warmth of the Szekszárd loess slopes; the roof structure and the fence of the covered terrace, as well as the bridge connecting the two ponds, are rustically built wooden structures. Guest areas are dominated by a tasteful, subtle, rustic style, predominantly using wood, completely in rhyme with the external appearance of the building. This style implies, fully consciously, that here, in Faluhely (‘Village’), we are indeed in a village.
The cellar system itself is the monumental creation of Ferenc Heimann, the most important builder master of Hungarian cellars. The cellar, covering 1,800 square metres, has been built from close to half a million large, rustic bricks. Twelve domes divide and create a homey atmosphere to the internal space; no wonder that this cellar is considered to be the largest newly-built vaulted wine cellar of Central Europe. Not only do the orderly proportions and the sacral solemnity provided by the domes contribute to the creation of a friendly atmosphere, the attention to detail also makes the place special and unique. Good examples for this inside the cellar include an ordinary water well and two, rather good quality sculptures. The cellar can seat up to 300 customers.
Winery technology
The technology applied is determined by the ideal that the winery follows, the type of wine that it wants to produce, and the style that it wishes to follow; also, a worthy professional value it considers marketable, or rather, which conforms to the expectations and changes of the market. These flavour preferences, categories, and goals have established the selection of wine tanks our winery has been using. Our rosés and whites are fermented in basic cooled/heated stainless steel tanks, since temperature control of these wines is the most crucial aspect; it is a well-known fact that the crispness, scent, and fruitiness of these types of wines can be conserved only by low temperature fermentation. At the Bodri Winery, in order to produce excellent quality wine, not only has this particular process been computerised, but internet-based control of the temperature has also been introduced, proposed by our young winery expert Adrián Bősz, originally a technology graduate, which has enabled him to look at winemaking from a different aspect as well. This is set to be followed by the internet-based control of the whole fermentation process; therefore, among many others, the mechanism of the Taucher press, as well as the programming of the soaking pumps are under development, just as the automation of the gadget loosening the marc base of our red wines.
Szeleshát Wine Estate – Szekszárd
The Szeleshát Wine Estate is situated in the Winegrowing subregion of Szekszárd, covering almost 40 hectares on the slopes of Nyéki Hill, the southernmost foothill of the Szekszárd Hills. It has been named after Szeleshát (‘windy ridge’) cart-way.
Its altitude is 178.5 metres; therefore, it rises about 100 metres out of the Sárköz Plane. Szeleshát cart-way lies in a northwesterly direction, on a roughly 300-metre-wide hilltop, slightly slanting in a southerly direction, towards Lajvérpuszta. The southern part of the cart-way leads to the Bonyhád – Bátaszék road through a ravine. To the east of the Estate the Sárköz plane, the Gemenc woods, and the Danube floodplain offer a scenic experience. In the south, the neo-Gothic church tower of Celtic Bátaszék dominates the view. In the west, the Geresd Hills, the wine cellars of Mórágy, and the hills of the Völgység region can be seen. Even the highest point of the Mecsek Hill, Zengő, can be made out in the distance. Looking to the north, the town of Szekszárd appears.
The climate of this wine region has a sub-Mediterranean character. The meso- and microclimate provided by the valleys surrounded by the hill ridges is excellent for winegrowing, especially for the cultivation of blue wine grapes. The soil of the Szeleshát is a fairly calcareous, deep loess, a characteristic of the surrounding hills. More than half of the area is covered with loessy forest soil mixed with red clay, the famous red clay of Szekszárd, formed during the Cenozoic era. The hills sank and were flooded by sea sediment, then rose to the surface again, creating this land of unmatched soil structure and rugged terrain. The high lime content of the red clay and the characteristics of this particular climate are extremely beneficial to the creation of a harmonic acid and tannin composition.
Szent Gaál Winery – Szekszárd
János Fogl took over the supervision of winemaking at the Szent Gaál Winery in 2011.
Fogl received his vintner degree at the University of Horticulture, then he went on to work in Tuscany and Villány, followed by Tokaj. He spent almost a decade working as a vintner in the wine subregions of the Balaton Uplands and in Somló. He has visited Europe’s most important winegrowing regions, spending a longer period of time in Spain. He returned to our country with several years’ experience and while observing traditional winemaking, he aims to satisfy wine lovers with more and more pleasant wines, applying his knowledge gained.
The Winegrowing subregion of Szekszárd is located on the east-facing slopes of the Szekszárd Hills, as well as over the descents of the east-westerly valleys. The different microclimatic factors of each location have a significant importance.
Várdomb (‘Castle Hill’)
The uniqueness and curiosity of Várdomb cart-way lie in its 7-hectare contiguous Kadarka plantation. According to local stories, the plantation was made in the 1960s-70s. Unfortunately, we have no precise record of the circumstances and date of the plantation’s establishment. In 1985-86, with the selection of the Pécs Research Institute of Viticulture and Oenology, the P9 clone characterised by its fruitiness, the next plantation was established.
Its cultivation method is low cordon.
Special attention and care need to be applied to getting to know the plantation, and to mapping the inherent opportunities and values of this grape variety. We have treated it to the best of our knowledge and professional humbleness, so that we may show the best wines this cart-way can produce.
Strázsahegy (‘Sentinel Hill’)
Strázsahegy cart-way stretches over 16 hectares, of which 12 are cultivated.
Grape varieties: Cabernet Sauvignon, Cabernet Franc, Blaufränkisch.
This is the most exquisite red wine cart-way of Szekszárd, having the best resources, which is supported by the experiences of the past years and the wines in its cellars.
This is the place where in the future, we expect to see our bold, full-bodied wines as well.
Its cultivation method is medium high cordon.
Twickel Wine Estate Kft. – Szekszárd
The Twickel Wine Estate is the winery with the largest area of land in the Winegrowing subregion of Szekszárd, covering nearly 2,000 hectares. Since 1993, Baron György von Twickel has been the owner of the almost 200-hectare estate. The mother of the owner, Baroness Maria Theresa Zichy born into a noble Hungarian family, was forced to leave the country in 1956. She moved to Germany, where she met her husband-to-be, Clemens von Twickel, from Northern Rhine-Westphalia. Baroness Maria Theresa Zichy’s devotion to her homeland and its people had not ebbed over the years and after the change of regime, they purposefully began to explore investment opportunities in Hungary, around the old Zichy estates. The family had been bound to agriculture for several generations, and thus opportunities provided by the Winegrowing subregion of Szekszárd gave the inspiration to winemaking.
Following the acquisition of the winery, they rearranged the grape variety structure and introduced the yield control method, a novelty in Hungary at the time. The winery has been in a state of constant renewal. Today, the capacity of only the fermentation area, located in the processing section, is close to 400 hectolitres.
Defining varieties are Szekszárd Kadarka and fűszeres (‘spicy’), the zamatos (‘luscious’) Blaufränkisch, as well as Cabernet Sauvignon, Cabernet Franc, Merlot, Pinot Noir, Portugieser, and the distinguished Syrah.
Baron György von Twickel is determined to achieve and maintain a high-quality product, which has made his winery one of the most modern winemaking factories of present-day Hungary. The Twickel Wine Estate Kft. has been ranked one of the master wineries of the country. The winery first operated under the name of Liszt Winery, until at the beginning of 2010, it separated from the Szekszárd Zrt. and adopted its present name.
At present, Baron György von Twickel lives near Szekszárd, in Kajmád puszta, with his wife and four children, who have already started taking part in the life of the winery: the most distinguished wines have been named after them.
Bernát Winery – Tolna
Tibor János comes from Hadikfalva, from a Bukovina Székely family. The name ‘Bernát’ – after one of the successful and wealthy people of the village – has been intended for him; but fate decreed otherwise, and now not only the winery but the youngest son bears the same name.
The family cultivates 14 hectares of land, and sells approximately 90% of the harvest; the family itself produces wine from the remaining amount (with a small amount of additional blue grape bought from elsewhere). Tibor has been engaged in grape cultivation for 21 years, beginning to make wine and to build an image with his partner, Dr. Viola Szőts, six years ago.
They managed to get some white grape territories within the framework of the compensation programme in the 1990s. They buy Cabernet Sauvignon and Merlot grapes from a local winegrower, making rosé from the former, and not without results. They received the champion prize straight away, at the first International Villány Rosé Competition. At present, Tibor is proudest of their 2012 Rhine Riesling, which has become a characteristic, full-bodied, fruity, concentrated item. Viola, however, favours their 2013 Pinot gris at the moment, saying that it has everything the Völgység has to offer: its a silky, clear nectar. Nonetheless, what they are both proud of is the fact that wine journalists have discovered the taste of the Völgység in their wines.
Their wine processing area and cellar are both situated by their house in Bonyhádvarasd. The cellar is a typical last century Swabian building; the place where, among many, the 2013 Pinot gris was created, which, honouring the traditions, became the wine of Hadikfalva in 2014 at the National Székely Wine Competition. The vintner couple support buying wine at wine shops, which are becoming rather obsolete these days; therefore, they supply items, among others, to the Blénesi Borház (‘Blénesi Wine House’) in Bonyhád, at producer prices. Furthermore, they are proud that their wines have been chosen as the house wines of the Hotel Mediterrán in Budapest. They claim that wine is their self-fulfilment, thus they endeavour to sell their products themselves, at thematic wine festivals, like the ‘wine street’ of the Tiszavirág Festival in Szolnok, where they can directly familiarise customers with the fruits of their labour. Looking to the future, to further facilitate this goal, they would like to establish a permanent tasting room at the Bonyhádvarasd wine cellar.
Batthyány Cellar - Villány
There are several famous and architecturally valuable cellars in Villány and its environs.
In Villánykövesd, the most important one is the cellar of the Batthyány estate, which opens its doors to visitors by appointment only.
History has revealed that viticulture was already practiced by the Romans at the foothills of the Szársomlyó. After the expulsion of the Turks, German people settled in Villánykövesd who have been cherishing their traditions and customs up to this day – this applies to winemaking and their architectural solutions, too. As a result of the work of the Swabian population who were settled in Villány and its surroundings, the vineyards and the wine region of Villány took a significant upswing in the 18th century.
Between 1810-1814, the feudal lord Ádám Batthyány, for the reception of the increased amount of crop, had a new tithe cellar built in Villánykövesd, by employing Italian church-builder masters. The brick-vaulted cellar received a unique L-shape design. Its narrower section leads to the church-size, 10-metre-wide, 40-metre-long, and 7-metre-high inner cellar area. The unfolding spectacle, a gigantic space surrounded by barrels, has an astounding impact on visitors. Since the technological development of the era did not allow for such a huge cellar to be built underground, they shifted a section of the hill, built the cellar in its place, and then moved the soil back on top of it. The cellar could not be deep but had to be really wide, for wine was transported with horse-drawn carriages in the olden days.
At the time of its construction, the building was owned by the Batthyány family, but as a result of a marriage, it became the possession of the Montenouvo family of Bóly, and remained so until the end of the Second World War. Consequently, the Producer Cooperative of Villánykövesd took over its ownership; then in 1975, it was shifted into the hands of the Új Alkotmány (‘New Constitution’) Farming Cooperative. Since October 2003, the owner has been the Villányi Szársomlyó Agricultural Kft.
Due to its unique, cathedral-like design, the cellar has outstanding acoustics. Making use of this facility, once a year – in the framework of the European Wine Song Festival – it becomes a concert hall that can seat an audience of up to four hundred.
At present, the owner of the Batthyány Cellar is the Villányi Szársomlyó Kft.
The grape plantations of the Villányi Szársomlyó Agricultural Kft. are situated to the south and west of the Batthyány Cellar. A significant part of the 120-hectare vineyard lies on the south-southwestern slopes of the 442-metre-high Szársomlyó Hill, situated in the Winegrowing subregion of Villány. Our plantations yielding excellent quality crop are located primarily in the Kopár and Présház cart-ways, in Nagyharsány.
In the past few years, we have established new vineyards in the legendary piece of land between the cellar lines of Palkonya and Villánykövesd: in the excellent, south-facing Fanny cart-way in Ivánbattyán, formerly used by the erstwhile Batthyány Estate of Bóly, and later the Montenuovo Estate.
Besides grape varieties considered traditional in the Winegrowing subregion of Villány (such as Cabernet Sauvignon, Cabernet Franc, Portugieser, Blaufränkisch, Merlot and Zweigelt, as well as Hárslevelű ‘Lime leaf’, Welschriesling, and Pinot gris), new grape varieties have also been added to our product range, such as the white grapes Chardonnay, Muscat Ottonel, Nektár (Nectar), Pinot Blanc, and Sauvignon Blanc. We also have promising Pinot Noir and Nero plantations.
