I mistakenly answered "more". There are times I use two, but only two. Sometimes I will put a .pdf on the screen of a desktop monitor that is perched high and translate it below on my laptop.

Perhaps when I have 4 eyes or more I'll acquire a second monitor. To me, it's a waste of resources we, translators, do not need. A good configuration is enough to split horizontally or vertically the screen.

I managed for many years on a single monitor, but since getting the second one, I cannot imagine going back to only one. I put the original on one screen and my translation on the other.
It seems to me that if you are working on two documents (the original, and the translation you are producing), you should have one screen for each. I feel it is like automatic transmission in cars. There is a school of thought that believes you should use only the right foot for both pedals. But to me,

Two is so much easier! I can't imagine that anyone could go back to one after they have seen how versatile two are.

The possibilities are endless:
CAT on one, source on the other.
Translation on one, PDF on the other.
Translation on one, browser on the other....

2 right in front of me, hooked to the desktop I work on... quite usefull as I have 20-30 windows open most of the time. I am considering getting bigger screens: 19 inches seem a bit small now that I am used to them.
Other screens are close at hand - laptop on the right (for music, another Messenger/Skype account, etc.), another on the left with other (older) desktops - scanner, printer server, Web server ...
