| Definition / notes: | Potassium bitartrate crystals found in wine bottles that have been subjected to cold temperatures. The cold treatment process usually applied to white and rosé wines is mainly aimed at precipitating this salt. After such treatment, the wine is decanted so these crystals will not appear in the bottle. The presence of bitartrates in a bottle does not have any effect whatsoever on the wine's organoleptic quality but many consumers, particularly in Spain, will reject bottles in which these crystals can be seen. |
