It is generally accepted that the first product formed by oxidation of oil or fat is a hydroperoxide. The usual method of assessment is by determination of the peroxide value. The most common analytical methods are those based on an iodometric titration, which measures the iodine produced from potassium iodide by the peroxides present in the oil.
