What matters with the word "yumuşak", does not necessarily mean wool's softness but flavor of wine with low alcohol level. İf sugar is more than regular, we call it "sweet wine" NOT Soft wine".

When people in Turkey drinks wine containing much sugar it is called "sweet wine not soft one" though!
