Explanation:
I'm hazarding a guess that "removido" refers to the gentle swirling motion applied at the end of clarification prior to the siphoning described here:

"After fermentation, wine undergoes natural clarification as a result of gravity which causes the leftover yeast particles from fermentation and the grape particles like seeds called lees, to settle at the bottom of the storage vessel. The wine is then siphoned or 'racked' into a new container leaving behind the lees."
