Here's the Merriam-Webster definition of 'symposium':
a meeting at which several speakers deliver short addresses on related topics or on various aspects of the same topic.
I think 'short' is the operative word here, and that there's no need to specify one-day. Conferences tend to deal with a broader range of topics and have parallel sessions. The same can apply to workshops, though the term covers a range of events; it implies informality and interaction.

I like both Conference and Symposium but Conferencia and Simposio have both been used in the ST.

Perhaps Conferencia could be translated as Lecture and Jornada as Conference.

Science Day sounds to me like an event at a primary school rather than an international meeting for Pediatric specialists. Just my view, perhaps it is a mistaken one

I like Workshop but the word Taller also appears in the text.
Perhaps One-day Scientific Workshop would fit..

I am aware that the most typical translation of Jornada is Day. However, in a medical context it can also mean Meeting; Discussion; Conference, all of which sound more appropriate in this context. The problem is I can't decide which is best! Perhaps none..

It sounds like you're misunderstanding "conferencia", which here means "lecture/presentation". "Jornada" presumably means "day" or "one-day seminar".
