I wonder if perhaps this isn't supposed to be コラゲナーゼ? Since コ and エ are pretty similar, perhaps they got mixed up by OCR or something along the way? Collagenase is a protease, and is, for example, mentioned a section on enzymes for meat processing in the book below.

エラゲ suggest it's a enzyme assosiated with エラゲ, which i presume is a synonym of dihydroindeno-2',1':2,3-fluorene.
