agree  Assiolo: Название соуса берётся в кавычки только в том случае, если это торговая марка, поэтому здесь они не нужны: соус ситронет, соус майонез, соус тартар. К сожалению, часто меню, особенно в интернете, составляет кто попало, с ошибками, и это сбивает с толку.
