Italian term or phrase: girare a vuoto
Verificare, tramite un manipolo Master, che il prodotto si accoppi perfettamente e che il manipolo Master non giri a vuoto
AND
Verificare, mediante un cricchetto Master, che la chiave si accoppi perfettamente e che non giri a vuoto

The document is quality control for a production run. Here the "chiave" is a dental ratchet which is tested to make sure that it engages properly and does not ... girare a vuoto (i.e. fail to rotate the abutment into place).

What is the term we would use under such circumstances?

engages properly
Explanation:
In my opinion you provided a perfectly viable answer yourself!

Make sure the ratchet is correctly positioned and engages properly... Or is properly engaged

in that case you could use to spin idly: make sure the ratchet is properly engaged and doesn't spin idly (ie:spin without making contact with any other parts)

An example of use here:
http://mikes.railhistory.railfan.net/r168.html

There are definite limits to the climbing powers of any conventional type of locomotive. When the gradient becomes too steep the adhesion is insufficient to move the train, and the wheels "spin" idly on the rails.

and here about a car wheel:

Pulling up with a squeal of protest from his tyres, the other driver ran back to find the runaway overturned and empty. One front wheel was still spinning idly, but the other was too buckled and bent to turn at all.

spin/turn freely

Explanation:
make sure that the ratchet is perfectly positioned and that it does not turn freely

I guess I would say that bolts/screws "spin" freely, while a wrench/ratchet/spanner "turns" freely

neutral  Patrick Hopkins: "girare a vuoto" does indeed also mean "run around" (in the sense of not having a precise destination), but this definition is not applicable to this context. It's a different kind of "girare a vuoto".

Notes to answerer
Asker: yes, i know it's a little pleonastic, though it could engage poorly I suppose without "girare a vuoto", so I wanted something that would give an idea of rotating on itself without being able to engage. Most similar ideas apply to engines, like "whirring" and therefore don't seem to work at all for such minute distances
