Description of the product to which the name in (1) applies: The name ‘Patata della Sila’ designates the conservation potato of the Solanum tuberosum species in the Solanaceae family obtained from the varieties catalogued in the national registers of varieties of the Member States of the EU and from certified seed potatoes, which must have the following characteristics for consumption: Form: round — round/oval — long/oval.** Size: 28 mm or less (granaglia), between 28 and 45 mm (mezzanella or tondello), **between 46 and 75 mm (prima), 76 mm or more (fiorone). Peel: resistant to friction. Flesh: compact, firm when pressed. Dry matter: minimum content 19 %. Polpa: compatta, senza cedimenti alla pressione. -------------------------------------------------- Note added at 23 hrs (2020-06-24 16:14:31 GMT) -------------------------------------------------- Caratteristiche La Patata della Sila è contraddistinta ed apprezzata per le ottime qualità culinarie, in particolare per quel che riguarda la frittura grazie all’elevato contenuto di sostanza secca che presentano i tuberi coltivati sull’Altopiano Silano. Relativamente a quest’aspetto è stata condotta un’analisi sulla varietà Agria comparandola con campioni provenienti da altre zone produttive. I risultati hanno dimostrato come la patata coltivata sull’Altopiano Silano presenti livelli di sostanza secca molto più elevati, quindi una migliore attitudine alla frittura. L’aspetto pedoclimatico del territorio dove viene coltivato questo prodotto assume una grande importanza. Da un punto di vista granulometrico i terreni silani sono in massima parte sciolti, tendenzialmente sabbiosi a grana fine e quindi molto permeabili e facilmente lavorabili; il pH risulta con un valore compreso tra 5 e 6,5; infine risultano essere ben dotati di sostanza organica, e quindi di fertilità naturale, che in alcune aree raggiunge valori pari al 10,04%. Dal punto di vista pedologico, secondo recenti studi (si può citare a riguardo Lulli ed altri., 2002) emerge che tali caratteristiche sono ottimali per la coltivazione della patata. Dal punto di vista climatico l’Altopiano della Sila presenta un clima estremamente secco d’estate e freddo d’inverno. Le temperature registrate riportano valori crescenti nel periodo tra aprile e maggio, ideale quindi per le semine. La crescita delle piante è inoltre favorita dall’escursione termica giornaliera e dalla radiazione prolungata che permettono di ottenere una crescita costante e lenta ed una maturazione finale della pianta consona all’ottenimento di un prodotto adatto alla lunga conservazione. Polpa: consistente, senza cedimenti alla pressione. Contenuto minimo sostanza secca 19 %, nelle varietà a maturazione precoce; 20 %, nelle varietà a maturazione media e medio-precoce; 21 %, nelle varietà a maturazione tardiva e medio-tardiva.
