smooth kamut penne Explanation: Penne come in two forms, ridged ("penne rigate" with lines like rigatoni), or smooth ("penne lisce"). In the English speaking world, you tend not to see that specification made in my experience (except sometimes directly on the pasta packaging which is often in Italian), so I'd say it's optional to say "smooth," but I've added it just in case. Turaniche refers to the grain. Grano turanico is what's most commonly known as kamut. It's one of those old-new (but actually old) grains that are all the rage among certain subsets of the population (along with millet, quinoa, amaranth, etc). |
