Il farro (Triticum dicoccum) è una varietà di frumento appartenente alla famiglia della graminacee, denominato anche "frumento vestito" in quanto, dopo la trebbiatura, la cariosside rimane ricoperta dalla glume e glumette. Il farro, dunque per essere utilizzato deve subire il processo di pulitura (sfarratura o sfarinatura) al fine di eliminare le glume e le glumette. La coltivazione interessa una varietà Local anche se più recentemente sono state utilizzate alcune varietà di diversa provenienza. I terreni su cui si esalta tale coltura sono profondi, privi di scheletro, di media tessitura, a reazione neutra o subacida, di media permeabilità. Il farro del pungolo ben si adatta alle zone di attuale coltivazione site tra i 400 m slm dove le precipitazioni si aggirano tra gli 800 ed i 900 mm di pioggia.
