Brânză de origine olandeză, din orașul Gouda de unde a împrumutat și numele, gouda se produce în prezent în foarte multe țări și se comercializează fie tânără, fie maturată.
Din lapte de vacă, gouda este o brânză tare de culoare galbenă, într-un strat protector de ceară de parafină, de asemenea galbenă. Sortimentele cele mai bune sunt cele cu vechime de 2-3 ani; sunt mai închise la culoare și au un gust puternic, de unt.
