Dans un texte suisse allemand :
"Der Baukommissionspräsident, ein *stumpenrauchender
Bäcker*, versteht sich nicht
mit dem Projektleiter, einem schwarzgekleideten,
jungen Architekten."

Auriez-vous une suggestion comment rendre cette métaphore pour un rural sans formation académique, tout en restant neutre ?

Explanation:
ou le boulanger du village / le boulanger moyen, le simple boulanger ..
C'est vrai qu'on laisse tomber le cigare aux lèvres, mais en français cela n'apporterait rien ici à mon avis.
Sinon cela devient péjoratif : le boulanger - péquenot, bouseux du coin !
