disagree  Cilian O'Tuama: sounds more like where food is prepared rather than where dirty dishes are stacked for washing

agree  billcorno (X): Since the description includes the term "Speiseabfall", I think food is involved so am agreeing.

sorting and scraping table

Explanation:
This is probably the table just before the dishwasher where food scraps are wiped off the crockery and cutlery before they are placed in the baskets that run through the dishwasher.

Also described by some manufacturers as a "prewash table with scrap hole". Usually, operators at this table have a water jet (spray off unit" for swilling scraps from the crockery, cutlery, glassware and trays.

TRIVIA
I worked on one of these dishwashing lines on a holiday job at Trentham Gardens in Staffordshire - it is no fun - but we did get to see Rod Stewart and Emerson, Lake and Palmer in concert through the kitchen door to the great hall, which was right next to the end of the dishwasher!

agree  Dennis Boyd: In the US the term is often bussing table or catch-all table. I assume this is the UK collocation for the same idea
