interchange of dishes

Explanation:
Without pictures of the dishes I can't say this is right, so I guess. Big portions of meat and small portions of potatoes and vegetables maybe.

neutral  writeaway: what is this supposed to mean?

neutral  Armorel Young: what are you interchanging with what?
5 hrs
  -> The beef with the vegetables, as you sometimes see in France and Germany: a lot of beef and little or nothing like potatoes and vegetables. Even in Amsterdam they know how spoil a good meal.

neutral  Thomas Pfann: Not sure about "art of dish preparation", but I like "preparation". I think that's what "Umsetzung" is all about.
1 hr
  -> Well, with 2 Hauben, gotta be a bit posh...!

neutral  David Moore (X): I'm afraid this sounds too 'art-ificial' to me...
1 hr
  -> Well, you go there to dine, not to eat...

neutral  Yorkshireman: Preparation is what happens in the kitchen. Gault-Millau judge things secretively, at the table. Sneaky b---ers!

agree  Claire Vaux: I like the word 'presentation'. You could even more away from the nominial style and go for "way that the dishes are presented"

agree  David Moore (X): Maybe 'creative presentation'?//As you say, it could well be either - they both say both anyway. I think it's largely up to the taste (sorry!) of the poster...//How about 'imaginative presentation'?
28 mins
  -> Thanks, David - could well be both, what do you think? We have "visuellen Umsetzung" and "harmonischen sowie gleichzeitig kontrastreichen Zwischengänge", which could be more about flavours. Sounds good, too!

(„creative, at times even adventurous“?)
3 hrs
  -> Thanks Thomas

neutral  Helen Shiner: Sounds a bit like a magic trick. Using realisation like this is always so tempting with GER, but it is just not really what we say in EN./David's suggestion of presentation, with or without, creative is more normal./Bear in mind 'gewagt' is the adjective.
6 hrs
  -> My suggestion and David's

agree  British Diana: Helen is right, but the German is equally pretentious
