I found a translation for "Schaumsuppe" hier as "cream soup" but does that denote the same thing as "Schaum" made out of a sauce? "Cream" sounds much more compact that "Schaum".

Explanation:
Very on trend! Can't say I've heard of a cranberry and horseradish foam but that doesn't mean it doesn't exist. Whipped until it is very frothy like the froth on a cappuccino.
