German term or phrase: Maisschollenfilet
Context:

"Frisches Maisschollenfilet mit Speck und Zwiebeln"

Obviously a fillet of plaice, but is the fish fed with corn, like Maispoularden (i.e. corn fed plaice) or is it fried/coated in corn?

Cf. on solitary reference to "corn-fed plaice":

May plaice / Spring plaice
Explanation:
Gemeint ist hier "Maischolle", abgeleitet vom Monat Mai (s. Diskussionsbeitrag).

Tatsächlich findet man via Google nur einige wenige Seiten/Rezepte, die den Begriff "May plaice" oder "Spring plaice" verwenden. Da es im Englischen keine gebräuchliche Bezeichnung für im Frühjahr gefischte Scholle zu geben scheint, solltest Du es vielleicht einfach als "fillet of plaice" übersetzen.

cornmeal battered plaice filet

Explanation:
Mais is the german word for corn. This prefix could indicate that the filet was battered (paniert, "Panade") using cornmeal rather than regular flour. The batter mixture is usually made of flour, egg and breadcrumbs, whereby pure cornmeal is often used for plaice and other fish instead of the breadcrumb version batter.

Example sentence(s):
  • Fresh cornmeal-battered filet of plaice with smoked ham and onions
