Crispy wraps sounds just right and goes with the photo. Tofu *skin * is specified, and the dish looks more like a free-form wrap than a tidy cylindrical roll (rolls don't have to be bread).

I split the term up into two (Knusper and Wickel) and searched for these two terms using "Linguee.com".

It must be said that it appears as if these two words have just been thrown together, because this word seems very rare indeed, after having done numerous searches on the WWW.
