I would imagine from the name of the dish that it has been formed into a kind of nest for the reblochon. Alternatively you may be able to use 'potato cradle' or 'potato tuile'

Explanation:
In Richard Hering's Lexikon der Kuche (Pfanneberg 1997), there is the following definition:
Hippen, Hohlhippen: Mit Eiklar gestoßene oder geriebene Mandeln, mit Zucker, Eischnee, wenig Mehl und Prise Zimt vermischt; zu düunnen Plätzchen auf gewachstes Blech gestrichen, im heißem Ofen gebacken, sofort abgenommen, über ein Nudelholz ode dünnes, rundes Stäbschen gedrückt; als Garnitur für Torten, Eisspeisen u.a. verwendet.
