As an alternative to "fine/gentle hoppiness", "delicate hoppiness" would also work nicely here.

Not to mention the *delicate hoppiness* in many of their beers which will of course also fade with time.

While stubbornly sticking to my guns with "hoppiness", I think perhaps the most suitable qualifying adjective might be "subtle".

It's a bit fuller than Hoegaarden, with the classic citrus peel and spice nuances and a *subtle hoppiness*.

neutral  British Diana: As far as I can see the word "hoppiness" is only ever used humourously. Do we know if this is appropriate here?// O.K. point taken, can we agree on the word being typical of this type of copy(words like "biscuity" come for me in the same category...)
