German term or phrase: Surschnitzel
from a menu - I know it's an escalope made from some sort of salted meat (more common in Vienna I think than in my part of Austria) but unsure of how to best translate. Pickled pork schnitzel? marinated pork escalope? Any opinions or ideas would be appreciated!

neutral  Rolf Keiser: cured is too general, since it can mean smoked, dried, air-cured, etc.

Sour (pork) cutlet/escalope

Explanation:
I would leave in sour since the meat has been marinated in vinegar.

neutral  Sandra SAYN (X): Well, but then this is also not 100% because we don't know whether it has been marinated in vinegar. "Suren" only refers to the general preservation process with salt. *It dosn't say that it is Sauerbraten*

-> I've never heard of "Sauerbraten" not being marinated in vinegar!

neutral  writeaway: so Sauerbraten is a sour roast?

-> and what do you think it's marinated in?

neutral  Alison Ashburner: If the menu is being translated for English customers in a restaurant, 'sour' sounds offputting. 'Pickled pork cutlet' sounds a bit tastier, but 'Cured pork cutlet' sounds quite nice (even though I agree it's not quite accurate)

Surschnitzel
My favorite, usually only found in Heurigen. I got conflicting explanations of this one: sur means sour, and so a Surschnitzel is marinated before cooking. But it also seems to be a pork cutlet, and I sort of suspect the meat is cured or smoked, since it appears slightly pink.
