Cutterage : omogeneizzazione

In base alle ricerche fatte, io credo sia l’omogeneizzazione, una fase di lavorazione della carne, successiva alla tritatura, in cui la carne diventa un impasto completamente omogeneo, cremoso, del tutto privo di “morceaux”, a cui si aggiungono successivamente sale, emulsionanti ecc ecc

Oltretutto con “saucisse” si intendono prevalentemente la saucisse de Francfort, saucisse de Strasbourg, ( = würstel), e i würstel si ottengono proprio con il procedimento indicato sopra.

saucisse :salsiccia: saucisses de Strasbourg, de Francfort, salsicce di Strasburgo, di Francoforte (sorta di würstel) [Ragazzini 2017]

come si può vedere dalle immagini, non ci sono più i “morceaux”, è un impasto omogeneo, liscio
