το poeles σημαίνει ότι είναι τηγανισμένα. Το βούτυρο Μασσαλίας είναι βούτυρο με διάφορα μυρωδικά (όπως τα "herbes de Provence" που είναι μίγμα θυμαριού, ρίγανης και διαφόρων άλλων)
Για το petite restauration, προσωπικά θα πρότεινα "Της ώρας" όπως λένε ελληνικά, διότι όλα αυτά που προτείνονται στο μενού αυτό φιτάχνονται εκείνη τη στιγμή.. (απλά δεν πρόλαβα την ερώτηση πριν κλείσει...)
