Le souci, si vous mélangez trop, c'est que le gluten va se développer et du coup votre biscuit va gonfler à la cuisson... Nous, on veut quelque chose de bien lisse qui ne gonfle pas trop en cuisson... Donc on ne mélange pas trop ! Et tout ira bien. :o)
PS : oui oui j'ai mis des gants... je suis un peu "pougnette des doigts" ! haha !
