With 46 years' fishing experience I can safely say that no angler would say 'fishing for carnivorous fish' - it's definitely 'predator fishing' (NOT predatorS) - in France this category would mainly include pike, zander and Wels catfish.

Fishing for carnivorous fish


Explanation:
These are fish such as perch, pike and sandre which eat other fish. Usually give good sport and the latter two are very good eating.

IMO predators may live off their prey but often just kill for the pleasure; Carnivores need to eat flesh to live.

neutral  writeaway: any refs?/spoke too soon. it's in all the Fr-En dictionaries. as it turns out it's the dictionary definition of carnassier but not the actual fishing term, which happens to be predator fishing.
