Context: A presentation explaining the process of puff pastry tasting to evaluate different brands

"Descripteurs aspect et texture:
Couleur homogène
Surface lisse
Hauteur de développement (cm)
Nombre de feuillets"

Tasters have to evaluate these elements. I believe the "Hauteur de développement" refers to the height of the pastry once it has risen, but I could be wrong. I'm not sure we'd use the word "development" in English, would "height of risen pastry" do? Any better alternatives from those specialising in the field?

I certainly understand it the same way as you — but would suggest this term; however, I have no actual knowledge whether this is in any way an 'official' term or not. I did even wonder about simply 'rise' — that might be another idea for you to research?

I agree with you and Tony that this is talking about the pastry's risen height. I've seen "rise" and "risen height", but thought I'd add this further option.
