This is listed in someone's Proz glossary as 'profit and loss account', but it doesn't seem quite right here. Context is working out staff costs in a bar/restaurant. This is an alternative to the option of multiplying the gross pay by a factor (to include social security etc.):

Voor de bar en de bediening kan ook het systeem van % op de verkoop toegepast worden.
Dit % bedraagt momenteel 11,4 % op het zakencijfer, inclusief B.T.W.

Sorry to waste your valuable time on this one. My eye glided over the entry in the Dikke Van Dale where it says it's the Flemish equivalent of 'omzet'. Duh. Liked writeaway's *chiffe* d'affaires!! ;-))
