Grinding is a process where material is removed by an abrasive. Only a very small amount of material is removed on each stroke (because the abrasive is very fine). This makes grinding (if done by hand) a very slow, boring, repetitive and labour-intensive process. It is no coincidence that some of the very first machines invented were grinding machines (for grinding grain). Hence, the use of "grinding out" in this way implies a long and boring process.

Sure. If McGregor were a pure wrestler, the fight with Mendes would have been boring. Two wrestlers don't make an exciting MMA fight. Eventually, McGregor won by TKO.

grind out refers to a tough win after a hard-fought, even fight.

I might well be wrong, but, in my opinion, "grind out" imply, by definition, active and busy action.
But to me the last sentence suggests that, according to Kavanagh, Mendes (by grinding out) would act passively to drag the fight out, which sounds strange to me.
