Підготовка дичини, птиці для тушкування й смаження, що полягає в обгортанні дичини пластинками свинячого сала й прив'язуванні крилець і ніжок домашньої птиці таким чином, щоб вони не розгорталися під час приготування й тушку можна було б рівномірно обсмажувати з усіх боків.2. Загальна підготовка дичини й птиці для приготування, у тому числі й шпигування.
