Espero que me puedan ayudar: estoy traduciendo un texto sobre la destilación de whisky, ¿cuando se habla de: 'the maturation' de un whisky en inglés se traduce por envejecimiento o añejamiento en español, porque me salen los dos y no se cuál seria más apropriado para hablar del whisky en particular?

Explanation:
As we lurch irremediably towards a full-frontal collision with the so-called ‘festive season’, I’m tempted to suggest añejamiento for ‘whiskey’ and envejecimiento for ‘whisky’. Whisky merely gets 'old', whilst whiskey genuinely 'matures'.

And, for the ill-named/ill-famed ‘whiskies’ fabricated on this (western) side of the Atlantic (both N and S of the equator) I’d be very tempted to bring into play the nicely ambiguous word rancidez:

neutral  Jaime Blank: El proceso es diferente y no creo que se utilize para whisky http://es.wikipedia.org/wiki/Criaderas_y_Soleras. Con respecto al "Glenfiddich 15 Year Old Solera Whisky" tengo un problema: lo preparado por metodo solera no puede tener fecha de maduración.
