Food & Drink / Food Security Requirements
English term or phrase: one-up, one-back
It is not the requirement of the facility to be able to trace past the first customer. Traceability is a "one up, one back" requirement. Procedures must include details of how all Raw materials, Packaging Materials and Processing Aids are "linked" through to the finished product. The product traceability procedure must outline how they will trace product to a customer and who is responsible for implementing and maintaining the product traceability system.

primeiro cliente, último fornecedor

Explanation:

"Tracking your food across the total supply chain ensures that manufacturers and distributors take a “one up and one back” approach. This approach enables everyone to know where it came from (one back) and who it was sold to (one up)."

"“We focus per the regulations one-up-one-back, but I would say even with some of our contract manufacturers we go two back — we go to their suppliers,”"

"they eventually initiated their own recall and contacted its manufacturing customers to ensure they recalled any of their own products that might contain the contaminated ingredient. This is known as looking “one-up.”"

"FSMA requires manufacturers to take a “one-up, one-back” approach, which means you know where your product came from and where it's going. "

In a one up, one back traceability scenario, each supply chain participant is required to maintain records of ingredients and finished product movement 1 step forward and 1 step back in the supply chain.

elo seguinte e elo anterior

Explanation:
A rastreabilidade exige uma abordagem 'one up, one back' (elo seguinte e elo anterior na cadeia de rastreamento do produto).

Diria assim, tal qual na página 4 deste pdf - http://www.iuufishing.noaa.gov/Portals/33/SIMP.ModelCatchCer...
