とあるのですが、Don't assume that if〜のこの文におけるニュアンスがつかめません。この後にはオーストラリア産のワインがどれだけ他地域と異なって素晴しいかという説明が続きます。

ちょっと日本語的にはスムーズじゃない部分があるでしょうけれど、ニュアンス的にはこんな感じです。

表記のものはひとつのあり得る訳で、あなたが「ますです」調を使っているか「だ、である」調かで違いますが、この線でいいと思います。
「知っているつもりになってはいけませんよ。オーストラリア産といったって、もういろいろあるんですから....」というのがニュアンスです。

Don’t assume that if とは文法的には正しいが、ややぎこちない英語ですね。この that if はなくてもよいと思います。
