文中の carcass(es) grading は 枝肉格付 という意味です。

Explanation:
付録2に記載されている価格と言うのは、最低価格であるが、枝肉の格付けを行い、両者が合意できる平均レベルの金額にする、ということを言っています。また合意となる対象の枝肉の格付けが4あるいは5、（A4やA5と呼ばれる牛肉でも最高ランク）の場合、合意した金額にもう少し上乗せします、ということです。
