とあるのですが、"syringed"が括弧付けになっているので、何か特別な訳を求めているのだと思います。
最初の段にあるように、カクテルの周り盛り合わせのように料理がのっているのだと思うのですが、"syringed"は単に「添え」のような訳でいいのか疑問です。

料理の説明とその材料から、Tomates à la Provençale に似た料理ではないかと思います（variation around a cocktail の部分は分かりませんが）。この料理の作り方は通常、横半分に切って種を取り除いたトマトに、パン粉、シャロットのようなネギの類、ハーブ、オリーブオイル、塩、こしょうなどのミックスをつめてオーブンでローストまたは蒸し煮にします。扱われているメニューにある料理はチャーヴィルソース以下トリュフまでの材料をあたかもシリンジを使ったかのようにトマトの中に詰め込んでローストするのかも知れません。つまり、トマトを横半分に切るのではなく、ヘタの部分を切り落とし、中をくりぬき、材料を詰めてローストするわけです。レシピを参考にご覧ください。

chaud-froidは温・冷製の食品という意味ではありません。フランス語からの間違った直訳です。本当の意味はここに説明されています：http://www.french.ne.jp/modules/xwords/entry.php?entryID=133...

で、カクテルの見ですが、フランス人の友達も確実ではないと言っていましたが、多分カクテルが添えられるとのことです。
ちなみに、フランス語のメニューは参考になると思いますが、お持ちですか、それとも送りましょうか。

Variation en chaud-froid autour d'un cocktail glace とは、温・冷製の食品がさまざまと皿にもられて、カクテルが添えられているのでしょうか。それとも、カクテルの中に食品が入っているのでしょうか。

ここもフランス人の友達が迷いましたが、仮によると、多分トマトの中にソースが入れられると。

あ、ちなみに、カクテルのほうですが、フランス語のVariation en chaud-froid autour d'un cocktail glaceの直訳で、ここのautourは「といっしょ」とか「添えて」という意味らしいです（自分はフランス語をしゃべれないので、友達が言ったことを書き込んでいるだけです）。ちなみに、ここのchaud-froidですが、英語版でおかしいな言葉になっていますので要注意。

カクテルのところを置いておいて、2行目だけを見ると、りょうるよう注射器またはベイスター（英語ではbaster。大きいスポイトのような調理器具）でソースを注入（注射？）するイメージが頭に浮かびますね... まったくの当てずっぽうですが、ご参考に。
