L'orzo viene seminato in autunno (entro la fine di ottobre) e in primavera in file distanti 15-20 cm una dall'altra. La raccolta viene alla piena maturazione verso la metà di maggio per semine autunnali e agosto- settembre per semine primaverili.
Per la produzione di malto, le cariossidi vengono mondate da tutte le impurità, selezionate in base alla varietà ed alle dimensioni dei chicchi e poi messe a macerare in appositi tini, fino a che non raggiungano condizioni ottimali secondo l'esperto "maltatore".
