Secondo me è per indicare che la madorla sarà bella bianca (sbicciata) o marrone (con la sua buccia), ovviamente entrambe sono senza GUSCIO!!

questo è il nome comune del prodotto pronto in commercio....se invece si comprono le mandorle intere e vengono macinate in casa allora sarebbe un indicazione della ricetta e dunque

mandorle (spellate o meno e macinate/trittate finemente)
