Qualcuno conosce una traduzione italiana per la tecnica di preparazione di alimenti "cook-and-chill"?
Da quanto ho capito, è una tecnica di cucina professionale che consiste in preparare i cibi fin quasi al punto di cottura, per poi congelarli con un getto d'aria.
