Grazie a tutti per i suggerimenti e per l'interessante discussione, che solo ora sono riuscita a leggere. Il contesto in cui ho trovato l'espressione è la pubblicità di un forno, per cui credo che la traduzione più appropriata sia "arrosto".

from the butcher's shop to the table a joint is a joint. Like every man woman and child in England I am an expert on the subject. Would anybody here look in a dictionary to find out what "pasta fresca" or "pizza" means?

which precise part it is. It is a national insitution in Britain.If you say piece of beef or cut of beef, I think about different ways of cooking beef. If you say "joint of beef", then my mouth starts to water and I start to think of Sunday dinner in England, with gravy, roast potatos and so on.
If I say I want a piece or cut of beef to a butcher, he is going to ask me what I want to do with it, boil, braise it, feed the dogs or what. If I say I want to roast it, he will offer me variety of different cuts called "joints". The perfect translation needs to convey a piece of beef specially for roasting which really makes your mouth water and think of Sunday dinner in England. It is almost a religion, and of course eaten after church in the morning.
And then the Tower of London has been guarded by the beef eaters since the time of Henry VIII.

certo non è semplicissimo indovinare allora, dipende da come e quando e perché... che non è ancora stato chiarito dall'asker. Non sappiamo se è comparato, se lo stanno cuocendo, se l'hanno già cotto e lo stanno mangiando... non sto scherzando, mi pare proprio un pochino complicato senza sapere di più, o sbaglio io?

quindi come dici tu: "taglio per arrosto", come taglio di partenza venduto dal macellaio; se poi lo vogliono fare spezzatino, arrosto o roast-beef son problemi loro, dico bene?

che mi pare di aver capito il tutto? Chi chiede vuol saper se si tratta di un pezzo in particolare, la risposta è sì=un taglio di manzo per/da arrosto, che non si identifica con il roast- beef degli English mother tongue per i quali roast- beef pare essere termine generico di pezzi di carne di manzo arrostito, per gli Italiani un pezzo "preciso" di manzo cucinato all'inglese. Insomma il nostro roast-beef non equivale al nostro Arrosto=nome generico di un modo di cucinare un taglio di carne.

hai ragione. Joint è http://www.merriam-webster.com/dictionary/joint
Quindi, anche letteralmente, il pezzo/taglio di carne che sarà arrostito. Del resto quando si va dal macellaio si chiede un pezzo per arrosto, o almeno le vecchie casalinghe fanno così, non l'arrosto che si va a comprare in rosticceria dove ti vendono piatti già cucinati.

sarebbe poi così errato chiamarlo "taglio/pezzo di manzo" SE non fosse ancora cotto, cioè SOLO come pezzo venduto, per esempio? Qui non si sapeva se fosse già cotto o comprato/venduto. Ho il dubbio per questo motivo. Certamente credo più a quanto avete detto voi che hai dizionari che, per ovvi motivi, a volte non approfondiscono, o meglio, non possono approfondire, se non dizionari specifici sull'argomento. Grazie :))
