Explanation:
Concordo con la risposta di Claudia Di Loreto. Un buffet, ovvero lo spazio/mobile utilizzato per esporre i cibi non è propriamente il fatto di servirsi "al buffet". In questo caso manterrei quindi "buffet di insalate" perché si riferisce al luogo, alla disposizione e non all'azione.
In rete si trovano anche riferimenti al salad bar:

ma non utilizzerei il termine inglese, a meno che il menù non appartenga a un ristorante/catena non italiano/a.
