To "μερίδιο των αγγέλων". Κατά την διάρκεια της αποθήκευσης στο βαρέλι, μέρος του υγρού (νερό και αλκοόλ) εξατμίζεται. Στη Σκωτία η εξάτμιση είναι περίπου 2%, ενώ στην Ινδία είναι περίπου 12% ετησίως. Σε περιοχές με υψηλή υγρασία χάνεται περισσότερη αλκοόλη απ ότι νερό με αποτέλεσμα ο αλκοολικός βαθμός να πέφτει. Ενώ σε περιοχές με υψηλή ξηρασία χάνετε περισσότερο νερό από ότι αλκοόλ με αποτέλεσμα ο αλκοολικός βαθμός να ανεβαίνει.
