Je suis un peu perdue avec cette formulation... Elle apparaît dans les notes figurant sous un graphique intitulé "Cost Efficiency and Size".

"Functional forms are partial predictions based on varying log of assets ($000s), holding other covariates fixed at their sample means."

Explanation:
Comme tu l'as expliqué, il y a une variable explicative particulière dont on veut voir l'effet sur notre variable expliquée. On maintient donc les autres variables fixes; et souvent, l'expression adaptée est ''variables de contrôle'', plutôt que covariables, qui je pense, n'existe pas en français. Les variables de contrôle sont dans le modèle, pour lui donner une certaine qualité, mais ce ne sont pas d'elles qu'on cherche à mesurer l'effet sur la variable expliquée.
