Greetings,

I had this dish quite a long time ago, so I'm not a hundred per cent sure of the details. But I seem to remember the chicken pieces were an unusual colour, a fairly bright reddish-pink perhaps, presumably from the meat having been steeped in chilis. I think it was served with onions too.

Oddly enough, it wasn't as piquant as I would have expected; perhaps herbs were used to make the taste milder.

Maybe it's another disn named Kung Pao Chicken

I think many Chinese also called Kung Pao Chicken as Spicy Sichuan Chicken. Different restaurant can make different Sichuan chicken. You'd better make more description on it.

Your mention of “herbs” reminds me of cumin (孜然). This dish comprises onions and is not piquant. But there is no involvement of chili in the recipe. It is possible that the colour of the chicken pieces is rendered by other ingredients.
