The bread there is so fancy, you need to be on a waiting list just to get a break basket and a glass of water.

:-) Naturally whatever it is will be fresh. To some extent, what you're all highlighting is the very spread of plausible possibilities and the ambiguity of the text. I think this will be one for the client.

If it is a one-day meeting and people have travelled an hour or two since breakfast to get there, a solid accompaniment will be provided with the ´formiddagskaffe´.
This could be rolls and butter, cheese and jam, with fruit for the health-conscious, but often this is referred to as ´rundstykker´and served before the meeting or conference starts.
Either way, definitely fresh baked. You can get quite convincing pre-formed´bake-off´ products, both bread and cakes, if all else fails, so no self-respecting hotel would serve anything that was not fresh from the oven!

Not quite. Smørrebrød is dark to black bread, topped with, for example, boiled eggs, mayo, shrimp, with a slice of lemon and cucumber in a twist, garnished with dill and a dab of caviar.
I am talking about bread baked as a loaf, with an excessive amount of attention and detail to make it rustic or characteristic.

Well, yes, but the bread isn't just plain white bread. There is a bread culture in Denmark, where it is expected meetings to be served with bread (brød) or rolls (bøller), which has a dirty doubt meaning.
A business meeting with gourmet bread, luxury butter, jam and some cheese, served with coffee, tea or juice, is not uncommon, not by a long shot.

Obviously it can be translated as 'bread'. I'm asking a contextual (and to some degree Danish cultural) question - is it likely that elevenses during a meeting at a hotel would be served with bread? Sounds like a depressing meeting to me, but I haven't done business in Denmark...
